Abstract

Rising public awareness about the care of our enviroment and therefore, corporate business awareness also, are notorious day by day. This real interest is reflected in environmental laws and other regulations, seeking at once, a more environmental friendly production and product and economic savings of great importance. Hence the increase in environmental studies of a different nature that imply the most recent methodologies for quantifying environmental impacts in the production of different products during their the life cycle (total or partial), in which the so-called Life Cycle Assessment (LCA) stands out for its scientific rigor and majority use. Another of the outstanding methodologies is the calculation of Carbon Footprint (product or corporate level) that among other differences with the LCA, focuses on a single environmental indicator (quantification of Greenhouse Gases) and get a more simplified environmental study than the LCA but not with fewer rigor. This environmental awareness is integrated very especially in the agri-food sector, as in wine and olive oil cases, in which Spain is the country or one of the most representative countries of the EU and worldwide. In this thesis the carbon footprint has been used as an indicator to evaluate and report the environmental burdens associated with wine production, working with a total of 18 wineries located in the main wine-growing regions of Spain and the South of France thanks to the realization of two projects in the wine sector, the projects CO2 Vino, 2014 and VINECO, 2014. So that, the inventory data on the production systems of these wineries have been obtained, have been statistically analyzed, evaluated the differences in use two usual reference flows for the agricultural sector (per ha of vineyard or kg of collected grapes) have been evaluated and finally the phases of greatest impact contribution together with their causes and possible improvements under calculated average values have been identified. In the same line, with the data and the previous results, six main methodological issues to consider when collecting corporate inventory data for later use in the Carbon Footprint of Product studies (which is the usual way of proceeding) have been approached and discussed: Fugitive emissions, waste recycling credits, use of "equivalent factors", definition of reference flow, accumulation and assignment of corporate values to minority products. These methodological points, may influence the results according to how they are treated. The study carried out on this methodological subject within this case of wine is widely applicable to any other product or industrial activity. Finally, the LCA was applied in the production of Virgin Olive Oil (VOO) to see the influence of the packaging on the environment of the product, studying the three main types of containers (glass, tin and polyethylene terephthalate). An estimation of the environmental consequences (in equivalent CO2 emissions) of the implementation of a new egislation in Spain on the use of non-refillable containers in the HORECA channel (restaurants and catering) has also been made.


La conciencia social y por tanto empresarial, del cuidado de nuestro entorno (medioambiente), está en alza cada día más. Este interés real se ve reflejado en leyes y normativas medioambientales, buscando una producción y producto más respetuoso con el medio ambiente y a la vez conseguir ahorros económicos de gran importancia. De ahí el aumento de estudios medioambientales de diferente índole que implican utilizar las recientes metodologías de cuantificación de impactos ambientales en la producción de diferentes productos durante su ciclo de vida (total o parcial), en el que sobresale el denominado Análisis de Ciclo de Vida (ACV) por su rigor científico y uso mayoritario. Otra de las metodologías sobresalientes es el cálculo de Huella de Carbono (nivel de producto o corporativo) que entre otras diferencias con el ACV, se centra en un solo indicador medioambiental (cuantificación de Gases de Efecto Invernadero) y así conseguir un estudio ambiental más simplificado que el ACV pero no con menos rigor. Esta conciencia medioambiental está integrada de manera muy especial en el sector agroalimentario, como en los casos del vino y el aceite de oliva, en los cuales España es el país o uno de los países más representativos de la UE e incluso del mundo. En la presente tesis se ha utilizado la huella de carbono como indicador para evaluar y reportar las cargas ambientales asociadas con la producción de vino trabajando con un total de 18 bodegas ubicadas en las principales regiones productoras de vino de España y el Sur de Francia gracias a la realización de dos proyectos en el sector del vino, los proyectos CO2 Vino, 2014 y VINECO, 2014. Con ello, se han obtenido datos de inventario sobre los sistemas de producción de estas bodegas, analizado estadísticamente los datos, evaluado las diferencias en usar dos flujos de referencia habituales para la parte agrícola (por ha viñedo o kg uva recolectada) y finalmente, se han identificado las fases de mayor contribución de impacto junto con sus causas y posibles mejoras bajo unos valores promedio calculados. En la misma línea, y con los datos y resultados anteriores, se han abordado y iscutido seis aspectos metodológicos principales a tener en cuenta al recopilar datos de inventario corporativos para luego utilizarlos en los estudios de Huella de Carbono de Producto (que es la forma habitual de proceder): emisiones fugitivas, créditos de reciclado de residuos, uso de "factores equivalentes", definición de flujo de referencia, acumulación y asignación de valores corporativos a productos minoritarios. Estos aspectos metodológicos, pueden influir en los resultados según cómo se traten. El estudio realizado sobre este tema metodológico dentro de este caso del vino es ampliamente aplicable a cualquier otro producto o actividad industrial. Finalmente, se ha aplicado el ACV en la producción de Aceite de Oliva Virgen (AOV) para ver la influencia del envase en el impacto ambiental del producto, estudiando los 3 tipos principales de envases (vidrio, lata y polietilentereftalato). También se ha hecho una estimación de las consecuencias ambientales (en emisiones de CO2 equivalentes) de la implantación de una nueva legislación en España sobre el uso de envases irrellenables en el canal HORECA (restauración y catering).
